Group director of culinary at the parent company Jas Hospitality, chef Emiliano Bernasconi’s plan is to go beyond the usual cuts of beef and try creating dishes using secondary and tertiary cuts – think brisket and short ribs. The beef will be sourced from Australia and US among other places. On the other hand, the bass will be sourced from the Chilean, Indian and Atlantic Ocean.
