When you’re a vegan or a vegetarian it’s pretty hard to find a good burger. Well, worry no more, we’ve got the perfect recipe for you to make your own.Â
Food expert Mark Setchfield (known to his food fans as Gas Mark Six) has put together this tasty treat…not only are they delicious, they’re simple to make. Winning!

Heat oil in a large frying pan over medium heat add the chopped onion, stirring until they start to soften.
Add the dried spices, garlic, lemon rind and season. Next add the carrot and courgette, cook for two minutes until they are soft. Remove from the heat and allow to cool.

Drain the butter beans place in a bowl, mash the beans with a fork and add to the cooled vegetables. Add the parsley, flour and lemon rind and season. With your hands mix all the ingredients. Divide the mixture into four and roll in the palm of your hands, flatten and place on some baking parchment, dust with some more flour and chill in the fridge.
Next make the guacamole, empty the avocado into a bowl and the lemon juice, onion and chilli flakes. Using a fork, mash the ingredients together breaking down any lumps until the avocado is smooth in texture.
In a frying pan or on a griddle, heat some oil and place the veggie patties, keep the heat low and cook the patties for around 8-10 on each side, until they are crisp.
Slice and toast the buns and place on a large serving dish. Add a spoonful of guacamole to each bun, add some rocket leaves then the pattie, top with some more guacamole and tomato.
And you’re done…yum!
