The Zero Loop Journey runs from 15 to 28 September 2025 and is all about giving every ingredient a second life. Each dish is crafted with a zero-waste mindset. From candied watermelon rind to avocado oil made from the seed, this is fine dining reimagined.
The journey starts with Ocean Zero — a fresh mix of crab, jalapeños and avocado. But here, the avocado steals the show. The shell becomes the bowl, the flesh is turned into a creamy purée and marinade… Even the seed is pressed into oil for a rich, nutty twist!
It’s zero waste, full flavor and all kinds of clever.
Next up is Tide to Tail — a smart, flavorful take on Scottish salmon. It’s served with leftover sushi rice, crisped into a golden cake, while the salmon skin becomes a crunchy topping. Even radish peels get their moment, adding a pop of texture.
It’s a dish that proves nothing needs to be wasted to taste incredible!
Sea & Roots stars local Koffer fish, served with celeriac done six creative ways. It’s presented as purée, roasted root, pickles, remoulade, crispy chips and a touch of celery salt. Each element brings its own texture and flavor. Yum!
For dessert… The Rind & Vine delivers a bright, refreshing finish with watermelon and tomato. The rind is candied. The tomato skins are crystallized. Both are then transformed into consommé, espuma and powder — proving that nothing is wasted, only reimagined.

Each course is paired with a bespoke, non-alcoholic cocktail made from peels, stems and infusions — extending the zero-waste philosophy from plate to glass. Highlights include Bloom Zero, a floral mix of jasmine tea and lemongrass soda. Sip to Shore, a savory blend of cucumber juice and nori tincture.
